FIF - Pomegranate-Cranberry Sauce

I saw this recipe and said to myself - you just have to try it! And I will, this Thanksgiving. Hugs!

Pomegranate-Cranberry Sauce

Our nutrient- and flavor-rich version of the holiday classic.

Some scholars believe the pomegranate was the fruit of the tree of life. Jewish tradition holds that its seeds match the number of mitzvot, or good deeds, in the Torah. Recent studies link pomegranate juice to lower LDL ("bad") cholesterol and blood pressure. Wish your loved ones healthy holidays with this dish, rich in meaning and antioxidants.

INGREDIENTS

2 cups (or 16 fluid ounces) 100% pomegranate juice
1 cup sugar
1 12-ounce bag (about 3 cups) of fresh or frozen cranberries
zest of 1 orange
1 11-ounce can of mandarin oranges, rinsed and drained
1/2 cup pomegranate seeds (optional)

Preparation

1. Bring pomegranate juice and sugar to a boil.

2. Add cranberries and simmer, stirring occasionally, until berries just pop, 10 to 12 minutes.

3. Stir in zest, orange segments and pomegranate seeds, if using.

4. Chill for 24 hours.

5. Serve with turkey or chicken.

Thankful Thursday

Last week I thanked God for my 4 children and today I want to thank God for my Granddaughter Alexys and my Mom Ann... Recently I went to see my Mom. We went to the opera and spent a day at the Wichita Zoo. It was very relaxing and I thank God for a Mom who cares about me and her family and for my little blessing of a granddaughter who I love as much as my children... There really isn't a difference in my heart at all. So, thank you Lord for these blessings in my life ☺

This and that and a bit of rambling

A lot of snow has melted and some is predicted for tomorrow, I hope not much but the winds are suppose to come up, which can cause drifts and make visibility scary. In the morning I may go pick up my granddaughter. I haven't seen her is a couple weeks.

Have you ever just felt rather dead inside, like you just don't know what is happening inside your brain or heart anymore? It is a rather confusing state to be in but also rather interesting. I have been thinking about this state of affairs or lack of, for the past week or so. I have been doing a lot of pondering about my life.

Number One Son called the other night and asked his Dad weather I told him I don't want to live up here much longer. I think my Son thought I was just sharing my feelings with him, things I wanted to say to my husband and hubby said he seemed surprised that I had talked to him about it, several times in fact and in depth. So, for me their is light at the end of the tunnel. I'm just not sure how long the tunnel is.

Someone informed me that due to the activity of the birds in the Black Hills that it is going to be a long hard winter. That was not encouraging but I can live with it. I so enjoy the birds outside my window...The junco's and nuthatches in particular and we do have a huge owl that comes around and scares the crap out of my cats...Poor things.

I am still in the getting rid of things mode. The other day I got rid of lids. I mean, I don't know what happens to all the bowls but the lids for some reason never disappear so I matched what I have and pitched the rest. I am not sure what to attack next. I think my and hubby's clothes. I am downsizing.

I less than two years I will be empty nested and I still have a house of stuff to serve six + on a regular basis. Being that this place isn't "home" to my three older children (Nebraska is) they don't visit much. We usually all just meet in Nebraska, where the grandma, aunts, uncles and cousins are... So, it makes sense for me to downsize.

Well, I am going to prepare to walk over the camp, get some fresh air. It is 47* in Lead-Deadwood so hard to say what it is here but it should be close. I also need to check my bird feeders.

Just in time for Thanksgiving...

Butterball Gerty and Turkey legs Clarence-

Honeymooned on a 1954 Honda.

Went to a farm pond for a Thanksgiving day picnic.

Lots of folks came by, roasting wild turkeys on a spit


They ate hors’ d’ oeuvres’

of pickled pigs feet and head cheese,

Drank champale (or old moon shine gingerale).

After feasting- on turkey gizzards and pickled eggs


Butterball Gerty and Turkey legs Clarence went skinny dipping.

Gerty got cold and the bike breaks down.

So, Turkey legs Clarence gives Butterball Gerty
